Cooler weather is about to hit soon! If you are craving something warm, comforting, and easy then give this a try! There are two ways to do this recipe. One way is with raw chicken and the other is with cooked chicken. Either way it will come out good! I just do the cooking a little bit different.
30ozNavy or Northern Beansuse either can or soak dried beans and cook them
115 ozCorn or Hominycan use either white or gold. Drain.
Spices
1tbspChili Powder
1tspPepper
1tspSalt
1 1/2tspCumin
1/4tspGarlic and Onion Powder, Oregano, and Crushed Red Pepper

Cooking with Raw Chicken: Place the raw chicken onto the bottom of the crock pot. Mix all the ingredients together and pour on top of the chicken. Cook on low for 8 hours. At the end of cooking take a spoon and break the chicken apart, stirring it.Cooking with Cooked Chicken: Just throw everything in together. For cooking time it doesn't take long since the chicken is cooked. I like to put it on high for 4 hours. I do this because I believe this gives the beans, chicken, etc. a chance to soak up the flavor.However you cook it, top with sour cream and cheese! Enjoy! 😋😋😋With my family, we double the recipe and eat this a couple of times a week or just freeze left overs.
