My kids have always enjoyed this and I wanted to share. With the taco seasoning mix I can throw simple meals together fast.
Taco Seasoning:
- 1 Tablespoon Chili Powder
- 1 1/2 Teaspoon Cumin Powder
- 1/4 Teaspoono Onion Powder
- 1/4 Teaspoon Garlic Powder
- 1/4 Teaspoon Crushed Red Pepper Flakes
- 1/4 Teaspoon Oregano
- 1 Teaspoon Pepper
- 1 Teaspoon Salt
This recipe is good for 1 pound ground beef or turkey. Cook the ground meat. Pour in 2/3 Cup water, pour in taco seasoning, mix. Bring to a boil then simmer for 5 to 10 minutes.
You can also do this with shredded chicken, but just add a little less water.
*If you add too much water, then boil it for a little longer while stirring and let it simmer a little longer. The water and seasoning will thicken.
I store the mix into small containers. Usually I make 3 at a time. One I use especially for quesadillas.
For quesadillas I do use a quesadilla maker. However, you can always make them on a non stick pan.
Spray (or use butter) on the non stick pan or the quesadilla maker. Take a tortilla, place it down on the pan or maker. Put some cheese on it, sprinkle a little of the taco seasoning around on the cheese, place another tortilla on top.
With the pan cook on low medium heat for a couple of minutes on each side. The sides should turn a golden brown. Examine my picture below. 😀
Tonight I had made another recipe. I mixed a pound of cooked ground beef and 2 cans (30 oz) kidney beans. I doubled the taco seasoning recipe, put it with 2/3 Cup water, and poured in with the beans and beef. Once it was done simmering, I spooned some onto a tortilla and added red peppers, onions, cheese, sour cream, and spinach.
There are many other things that you can do with the taco seasoning and ground meat. You can add tortilla chips, pasta, nacho chips, etc. if you don’t have tortillas.
You can also add the taco seasoning to veggies if you don’t want the meat. I would sautee the veggies with butter or olive oil. When adding water, just add less, stirring occasionally while it cooks.
Another idea would be to serve with black beans, rice, and corn.
