My favorite dinner to serve is oven baked chicken with a couple of sides. Cooking the chicken is super easy. A lot of times I cook the chicken in the oven BUT it can also be cooked in the crock pot. I’ll post both cooking methods 😉 .

When I select my chicken at the store usually they are about 6 lbs. For cooking in the oven I use a 9 x 13 casserole dish.

First, take a knife and poke a few holes over the chicken. You don’t have to get all crazy, maybe just 4 holes per breast and then a couple on each leg.

Drizzle 2 tablespoon of Extra Virgin Olive Oil all over chicken. Next take 2 tablespoon of butter. Place one tablespoon of butter into the chicken. Take the other table spoon and cut it up, placing on top of the chicken.

Place the chicken in the casserole dish and sprinkle these ingredients on top:

  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1/2 teaspoon Thyme
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • 1/2 teaspoon Basil

When seasoning the chicken you can really use any spices you want. I usually cook with Oregano instead of Thyme. Instead of onion and garlic powder you can always chop up onions and garlic and stick inside of the chicken. If you don’t have much ingredients then use what you have.

Chicken before it’s cooked

If you are like me and put all the seasonings on there and then are like 😱😨 because you forgot to add the butter and EVOO. It’s okay! Just go ahead and add it on there. The spices will stick to the chicken. In fact when making this post and this chicken in the picture, that very thing had happened! Oh well. Just add it and move on!

Cover chicken with aluminum foil. Bake 400 degree for 1 hour 45 minutes.

NOW for the crock pot. Before putting the chicken in the crock pot, take aluminum foil and make 4 balls out of them. Place the balls into the crock pot. Then place the chicken on the aluminum balls and add the EVOO, butter, and seasonings. The balls will help keep the chicken a float. If you don’t have the balls, it’s okay. It’s not the end of the world…the chicken will just become extra tender, falling apart.

Cook chicken on low for 6 hours.
