Snow is covering the ground outside, it’s 32 degrees. It’s officially a snow day! Planning on going out to play in the snow and build a snowman!? If you’re like us then you will be in and out of the house most of the day and when you’re finished it’s time to cuddle up with a mug of hot cocoa.
Chili in a crock pot is such a great meal for days like this! You throw it together and forget about it until it’s time to eat. This is also a great meal for hectic days. When I used to work onsite, I would cook the meat the night before and put all the ingredients in the crock pot ceramic bowl, store it in the fridge. All I would need to do the next morning is set the crock pot bowl into the crock pot heating element and set for 8 hours on the low setting.
Ingredients:
- 2 lbs ground turkey/beef
- 28 oz can Diced Tomatoes, drained
- 28 oz can Crushed Tomatoes
- four 15.5 oz cans Dark Kidney Beans
- 28 oz can Baked Beans (my favorite to use is Bush’s Honey Sweet Baked Beans)
- 4 tbsp Chili Powder
- 2 tsp Pepper
- 2 tsp Salt
Cook the ground turkey/beef. Mix the cooked meat with all the other ingredients into the crock pot. Either cook on high for 4 hours or low on 8.
If the recipe is too large then you can always cut it in half or just freeze what you don’t want to eat. I freeze mine in a freezer ziploc bag and then dump it into the crock pot and cook it on low for 8 hours. Sometimes I have to defrost it in the microwave a little first so it can fit into the crock pot.
We love to top our chili with sour cream, shredded cheese, and corn chips! Sometimes we will put the chili over rice or a baked potato. Yum!
